Instructions
- Make Pandan Jelly: In a saucepan, combine agar agar, sugar, water, and pandan extract. Bring to a boil, then reduce heat and simmer until fully dissolved. Let it cool before cutting into bite-sized cubes.
- Prepare Red Rubies: Coat diced water chestnuts with red food coloring and a sprinkle of tapioca starch. Boil the coated chestnuts for about 10 minutes until they turn translucent, then immediately cool them in an ice bath to set the texture.
- Cook Coconut Milk: In another saucepan, mix coconut milk, water, salt, and sugar. Heat gently while stirring constantly until the sugar dissolves—approximately five minutes. Remove from heat and let the mixture cool.
- Assemble Ingredients: Drain canned fruits, reserving the syrup for sweetness adjustment. In a large bowl, combine pandan jelly cubes, pineapple jelly, coconut jelly, red rubies, canned fruits, and toddy palm seeds together. Pour in the cooled coconut milk mixture and mix gently.
