Ingredients
Scale
Sweet Potato Base
- 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
- 1/2 cup maple syrup
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
Dry Ingredients
- 1 cup all-purpose flour
To Finish
- Maple syrup for drizzling (optional)
Instructions
- Prepare Sweet Potatoes: Preheat your oven to 400°F (200°C). Prick the sweet potatoes with a fork and bake directly on the oven rack for 45-60 minutes or until tender. Once cooled slightly, mash them until smooth.
- Mix Wet Ingredients: In a large bowl, combine the mashed sweet potatoes, maple syrup, brown sugar, and eggs. Add vanilla extract, cinnamon, nutmeg, and salt. Whisk the mixture thoroughly until it is smooth and well combined.
- Add Flour: Gradually add the all-purpose flour to the sweet potato mixture. Stir gently with a spatula or spoon until just combined to avoid overmixing, which keeps the bars tender.
- Prepare Baking Pan: Grease a 9×9-inch baking pan or line it with parchment paper for easy removal. Pour the sweet potato batter evenly into the pan and smooth the top with a spatula.
- Bake the Bars: Place the pan in the preheated oven and bake for 25-30 minutes. The bars are done when the edges are set and a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the bars to cool in the pan for 10-15 minutes, then transfer them to a wire rack to cool completely. Once cooled, cut into squares or rectangles. Optionally, drizzle with additional maple syrup before serving.
Notes
- Pricking the sweet potatoes before baking helps them cook evenly and makes them easier to mash.
- Ensure not to overmix after adding the flour to maintain a tender texture.
- For a vegan version, substitute eggs with flax eggs or a commercial egg replacer and use maple syrup instead of brown sugar if seeking pure maple sweetness.
- These bars can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
- Consider adding chopped nuts or a streusel topping for extra texture and flavor.
