Ingredients
Scale
Salmon and Seasonings
- 2 salmon fillets
- Salt to taste
- Pepper to taste
Radicchio and Anchovy Sauce
- 1 head radicchio, chopped
- 2 anchovy fillets, minced
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 1 tablespoon lemon juice
Instructions
- Heat the oil: Warm 1 tablespoon of olive oil in a skillet over medium-high heat until shimmering.
- Season and cook salmon: Season both sides of the salmon fillets with salt and pepper. Place them in the hot skillet and cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.
- Prepare the sauce base: In a separate pan, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and anchovy fillets, cooking them until fragrant and the anchovies have dissolved into the oil, about 1-2 minutes.
- Add radicchio and lemon juice: Stir in the chopped radicchio and pour in the lemon juice. Cook, stirring occasionally, until the radicchio is wilted and tender, around 3-4 minutes.
- Combine and serve: Plate the cooked salmon fillets and top each with a generous spoonful of the radicchio and anchovy sauce. Serve immediately while hot.
Notes
- Ensure not to overcook the salmon to keep it moist and tender.
- Adjust anchovy quantity if you prefer a less intense savory flavor.
- Use fresh lemon juice for the best flavor impact.
- This dish pairs well with steamed rice, quinoa, or a light green salad.
