Description

Ranch Pinwheels are a delicious and easy-to-make appetizer featuring a creamy ranch-flavored filling paired with cheddar cheese, bell peppers, and green onions, rolled inside large flour tortillas or baked puff pastry sheets. These versatile pinwheels can be served cold as no-bake tortilla wraps or warm as crispy baked puff pastry bites, perfect for parties, snacks, or gatherings.

Ingredients

Scale

For Filling

  • 8 oz cream cheese, softened
  • 1/2 cup sour cream or mayonnaise
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped green onions
  • Optional: chopped cooked chicken, black olives, or spinach (amount as desired)

For Assembly

  • Large flour tortillas (for no-bake option) – 24 tortillas
  • Or puff pastry sheets (for baked option) – enough for 24 servings

Instructions

  1. Prepare Ranch Filling: In a medium bowl, mix the softened cream cheese, sour cream (or mayonnaise), and ranch seasoning packet until completely smooth and well combined.
  2. Add Vegetables and Cheese: Stir the shredded cheddar cheese, diced red bell pepper, and chopped green onions into the ranch mixture evenly.
  3. Assemble Tortilla Pinwheels (No-Bake): Spread a generous layer of the ranch filling evenly across each large flour tortilla. Roll each tortilla tightly from one side to the other to form a log shape.
  4. Chill and Slice: Wrap the rolled tortillas in plastic wrap and refrigerate for at least 1 hour to set. After chilling, slice each roll into roughly 1-inch thick pinwheels and arrange on a serving platter.
  5. Assemble Puff Pastry Pinwheels (Baked): Preheat your oven to 400°F (200°C). Roll out the puff pastry sheets and spread the ranch cream cheese mixture evenly over them. Add any optional fillings such as chopped chicken, black olives, or spinach if desired.
  6. Roll and Slice Pastry: Roll the puff pastry tightly into logs and slice into 1-inch thick pieces.
  7. Bake Pinwheels: Place the sliced puff pastry pinwheels on a lined baking sheet and bake in the preheated oven for 15-18 minutes or until golden brown and crispy. Remove from oven and allow to cool slightly before serving.

Notes

  • You can customize the filling by adding cooked chicken, black olives, or spinach to suit your taste.
  • For a vegetarian option, omit any meat additions and use sour cream instead of mayonnaise if preferred.
  • Chilling the tortillas before slicing helps them maintain their shape when served.
  • Puff pastry pinwheels are best enjoyed warm fresh out of the oven but can be reheated.
  • Use fresh vegetables and herbs to enhance flavor and texture.
