Description

Lemon-Thyme Chicken is a vibrant, flavorful dish featuring tender boneless chicken breasts cooked to golden perfection in a buttery lemon and thyme sauce. This easy-to-make Mediterranean-inspired recipe combines fresh lemon juice, zest, and fragrant thyme for a bright and savory meal perfect for weeknight dinners or casual gatherings.

Ingredients

Scale

Chicken

  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Sauce

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup chicken broth
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon dried thyme

Instructions

  1. Season the Chicken: Pat the chicken breasts dry with paper towels. Season both sides evenly with salt, black pepper, and paprika to ensure balanced flavor throughout.
  2. Cook the Chicken: Heat olive oil and unsalted butter in a large skillet over medium-high heat. Once the butter is melted and the pan is hot, add the chicken breasts. Cook each side for 5 to 6 minutes until they develop a golden brown crust and are cooked through (internal temperature of 165°F). Remove the chicken from the skillet and set aside.
  3. Sauté the Garlic: In the same skillet, add the minced garlic. Sauté for about 30 seconds until fragrant, making sure not to burn the garlic as it will become bitter.
  4. Prepare the Sauce: Stir in fresh lemon juice, lemon zest, chicken broth, fresh thyme leaves, and dried thyme. Use a wooden spoon to scrape up any browned bits stuck to the bottom of the pan, incorporating all the flavors into the sauce. Let it simmer gently for 3 to 4 minutes to thicken slightly and meld the flavors.
  5. Finish and Serve: Return the cooked chicken breasts to the skillet, spooning the sauce over them. Cook for an additional 2 to 3 minutes to heat the chicken through and coat it evenly in the lemon-thyme sauce. Serve warm with the extra sauce drizzled on top for maximum flavor.

Notes

  • For enhanced flavor, marinate the chicken in a mixture of lemon juice, olive oil, and thyme for 1 to 2 hours before cooking.
  • This dish pairs wonderfully with roasted vegetables, rice, or mashed potatoes for a complete meal.
  • You can substitute bone-in chicken thighs for the breasts, but expect a longer cooking time to ensure they are fully cooked.
