Ingredients
Scale
Zucchini Noodles
- 2 medium zucchinis, spiralized
Protein and Sauce
- 1 pound chicken breast, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup cauliflower florets
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Prepare the Zucchini Noodles: Spiralize the 2 medium zucchinis into noodles using a spiralizer or julienne peeler. Set aside.
- Heat Oil and Sauté Garlic: In a skillet over medium heat, warm 2 tablespoons of olive oil. Add the minced garlic and sauté for 1 minute until fragrant.
- Cook the Chicken: Add the sliced chicken breast to the skillet and cook, stirring occasionally, until the chicken is no longer pink in the center, about 6-8 minutes.
- Steam and Blend Cauliflower: Meanwhile, steam the cauliflower florets until soft, about 5-7 minutes. Transfer the steamed cauliflower to a blender, add 1/2 cup chicken broth, and blend until smooth to create a creamy sauce base.
- Make Alfredo Sauce: Pour the cauliflower sauce into the skillet with the chicken. Stir in 1/4 cup grated Parmesan cheese and season with salt and pepper to taste. Cook for 2-3 minutes until the sauce is heated through and slightly thickened.
- Toss in Zucchini Noodles: Add the zucchini noodles to the skillet and gently toss with the chicken and Alfredo sauce until the noodles are coated and warmed, about 2-3 minutes. Avoid cooking too long to prevent noodles from becoming mushy.
- Serve Warm: Plate the Zucchini Noodle Chicken Alfredo immediately and enjoy warm for best texture and flavor.
Notes
- Do not overcook zucchini noodles to maintain their texture and avoid sogginess.
- Use freshly grated Parmesan cheese for better melting and flavor.
- Cauliflower sauce is a low-carb alternative to traditional heavy cream Alfredo sauce.
- Feel free to add herbs like basil or parsley for extra freshness.
- Can be served with a side salad or garlic bread for a complete meal.
