Instructions
- Prepare Zucchini: Grate the zucchinis and sprinkle them with salt. Let the zucchini rest for 10 minutes to draw out excess moisture.
- Drain Moisture: After resting, thoroughly drain the excess moisture from the grated zucchinis using a clean kitchen towel or paper towels to ensure the fritters remain crispy.
- Mix Ingredients: In a large mixing bowl, combine the drained zucchini, all-purpose flour, eggs, grated Parmesan cheese, chopped fresh parsley, black pepper, and garlic powder. Stir well until all ingredients are evenly incorporated into a batter.
- Heat Oil: Pour vegetable oil into a skillet and heat it over medium heat until hot but not smoking, suitable for frying.
- Form Fritters: Drop spoonfuls of the zucchini batter into the hot skillet. Use the back of the spoon to flatten each dollop slightly to form fritters.
