  • 1/4 cup granulated sugar

For the filling:

  • 16 oz cream cheese, softened
  • 1 cup ube halaya (purple yam jam)
  • 3/4 cup granulated sugar
  • 3 large eggs, room temperature
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Optional topping:

  • Whipped cream or extra ube halaya

Instructions

  1. Preheat the oven: Preheat the oven to 325°F.
  2. Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan. Bake for 8 minutes.
  3. Make the filling: Beat cream cheese until smooth. Add ube halaya, sugar, eggs, sour cream, heavy cream, vanilla extract, and salt. Mix until smooth.
  4. Bake: Pour filling over crust. Bake for 50–60 minutes until edges are set and center is slightly jiggly. Cool in the oven for 1 hour.
  5. Chill: Refrigerate for at least 4 hours. Top with whipped cream or ube halaya before serving.
