- 6 flatbreads or pita breads (Papa Pita brand recommended)
- 2 cups cooked chicken (costco Bare Life chicken nuggets, cooked and chopped)
- 1 ½ cups sun-dried tomatoes
- 1 ½ cups baby spinach leaves, torn
- 2 cups shredded mozzarella cheese
Instructions
- Preheat Oven or Air-Fryer: Preheat your oven or air-fryer to 350 degrees Fahrenheit to prepare for cooking the pita pizzas.
- Prepare the Garlic Parmesan Sauce: In a medium saucepan, combine heavy cream, chicken broth, minced garlic, Italian seasoning, Parmesan cheese, and black pepper. Stir well to blend the ingredients.
- Thicken the Sauce: In a small bowl, mix the all-purpose flour with water to create a slurry. Pour this slurry into the sauce mixture in the saucepan. Cook over medium heat, whisking continuously until the sauce thickens. Remove from heat and cover to keep warm.
- Assemble the Pita Pizzas: Lay out the pita breads on a flat surface. Evenly spread 3 tablespoons of the prepared sauce onto each pita. Top each with 1/3 cup cooked chicken, 1/4 cup sun-dried tomatoes, and 1/4 cup torn baby spinach leaves. Finish by sprinkling 1/3 cup shredded mozzarella cheese over the top.
- Cook the Pizzas: For oven cooking, place the assembled pita pizzas on greased baking sheets and bake for 10 to 12 minutes until the cheese has melted. If using an air-fryer, place one pita pizza on the air-fryer tray and cook for 5 to 6 minutes until the cheese is melted.
