Cake Ingredients
- 2 cups all-purpose flour
- 2 cups sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
Filling and Topping
- 1 cup caramel sauce
- 1 cup chopped pecans
Instructions
- Preheat and prepare pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to ensure the cake releases easily after baking.
- Mix dry ingredients: In a large mixing bowl, combine the all-purpose flour, sugar, unsweetened cocoa powder, baking powder, baking soda, and salt. Stir these ingredients together until evenly mixed.
- Add wet ingredients: Add the eggs, whole milk, vegetable oil, and vanilla extract to the dry ingredients. Mix thoroughly until you achieve a smooth and uniform batter without lumps.
- Incorporate boiling water: Carefully stir in the boiling water into the batter. This will thin the batter and help create a moist, tender cake.
- Bake the cake: Pour the batter evenly into the prepared cake pans. Place them in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cakes: Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, carefully remove the cakes from the pans and transfer them to a wire rack to cool completely.
- Assemble the cake: Once cooled, spread a generous layer of caramel sauce over one of the cake layers. Sprinkle chopped pecans evenly on top of the caramel layer.
- Top and serve: Place the second cake layer on top. Drizzle the remaining caramel sauce over the top of the cake, and add more chopped pecans if desired. Slice and serve your indulgent Turtle Caramel Cake.
Notes
- Ensure the cake is fully cooled before assembly to prevent the caramel sauce from melting and making the layers slip.
- Use good-quality caramel sauce or make homemade caramel for enhanced flavor.
- For an extra touch, you can toast the pecans lightly to bring out their nutty flavor before using.
- Store the cake covered at room temperature for up to 2 days or refrigerate for longer freshness.
- This recipe can also be made into cupcakes using the same batter and reducing baking time to about 20-25 minutes.
