Ingredients
Scale
Filling
- 6 large peaches, peeled, pitted, and sliced
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tbsp cornstarch
- 1 tbsp lemon juice
Crust and Topping
- 3 pre-made pie crusts (or homemade)
- 4 tbsp unsalted butter, melted
- 1 egg, beaten (for egg wash)
- 2 tbsp turbinado sugar (optional)
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Mix Peach Filling: In a large bowl, combine the sliced peaches with granulated sugar, brown sugar, ground cinnamon, ground nutmeg, cornstarch, and lemon juice. Stir well to evenly coat the peaches with the spices and sugars.
- Layer First Crust: Roll out the first pie crust and place it into the prepared baking dish. Trim any excess crust around the edges for a neat fit.
- Add First Peach Layer and Second Crust: Spoon half of the peach mixture evenly over the first crust. Cover this layer with the second pie crust, trim edges, and gently seal the crust edges together.
- Add Second Peach Layer: Spread the remaining peach mixture evenly over the second crust layer.
- Top with Third Crust: Place the third pie crust over the peach layer. Seal the edges well and cut small slits in the crust to allow steam to escape while baking.
- Apply Butter and Egg Wash: Brush the top crust with melted unsalted butter, then with the beaten egg for a shiny golden finish. Sprinkle turbinado sugar on top if desired for added texture and sweetness.
- Bake the Cobbler: Bake in the preheated oven for 40-45 minutes, or until the crust is a beautiful golden brown and the peach filling is bubbly.
- Cool and Serve: Allow the cobbler to cool slightly before serving. It pairs wonderfully with vanilla ice cream or whipped cream for an extra indulgent treat.
Notes
- Peeling peaches is easier if you blanch them in boiling water for 30 seconds and transfer immediately to an ice bath.
- Use ripe but firm peaches for the best texture.
- If you prefer, make your own pie crust to enhance the flavor.
- Turbinado sugar is optional but adds a nice crunch and sweetness.
- Ensure slits are cut into the top crust to prevent it from puffing up too much.
- Leftovers can be refrigerated for up to 3 days; reheat before serving.
