  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • 1 tablespoon lemon juice

  • 1 egg (beaten, for egg wash)
  • 1 tablespoon coarse sugar (optional, for topping)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare the crust: Roll out one half of the pie crust and fit it into a 9-inch pie plate.
  3. Make the filling: In a large bowl, combine the rhubarb, strawberries, blueberries, raspberries, sugar, cornstarch, lemon juice, lemon zest, and salt. Toss until the fruit is evenly coated.
  4. Fill the crust: Pour the filling into the prepared pie crust and dot the top with pieces of butter.
  5. Top and bake: Roll out the second crust and place it over the filling. Seal, crimp the edges, brush with egg wash, and sprinkle with coarse sugar. Bake for 20 minutes at 400°F, then reduce to 350°F and bake for 35–40 minutes until golden and bubbly.
