Optional Topping:

Instructions

  1. In a small saucepan, combine the honey, brown sugar, and butter. Heat over low until the sugar dissolves and the mixture is smooth. Remove from heat and let cool slightly.
  2. In a large mixing bowl, combine the flour, ground almonds, baking soda, salt, and all spices. Stir in the cooled honey mixture, egg, and lemon zest if using. Mix until a soft dough forms.
  3. Cover and refrigerate for at least 2 hours, or overnight for deeper flavor.
  4. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  5. Roll the dough into small balls or flatten slightly for a more traditional shape, and place on the baking sheet about 1 inch apart.
  6. Bake for 10–12 minutes, or until the edges are lightly golden.
  7. Cool on a wire rack, then dust with powdered sugar or dip in chocolate glaze if desired.
