Description

Delicious Tomato Fritters are a crispy, flavorful homemade treat perfect for a savory snack or appetizer. These fritters combine fresh Roma tomatoes, mild cheddar cheese, and a hint of jalapeño heat, all bound together in a light batter and perfectly fried to golden brown. Served with a creamy tomato mayonnaise dipping sauce, these fritters offer a perfect balance of tangy, creamy, and spicy flavors.

Ingredients

Scale

Dipping Sauce

  • 1 cup Mayonnaise
  • 2 medium Roma tomatoes, finely chopped

Fritter Batter

  • 1 cup Diced Roma tomatoes
  • 1 cup All-purpose flour
  • 1 tbsp Baking powder
  • 1 tsp Kosher salt
  • 1 tsp Black pepper
  • 2 cloves Garlic, minced
  • 1 cup Whole milk
  • 2 large Eggs
  • 1 cup Chopped green onions
  • 1 medium Jalapeño pepper, finely chopped
  • 1 medium Red onion, finely chopped
  • 1 cup Mild cheddar cheese, shredded
  • 2 cups Vegetable oil (for frying)
  • Salt, to taste

Instructions

  1. Prepare the dipping sauce: In a small bowl, combine mayonnaise and the finely chopped Roma tomatoes. Mix well and set aside to allow the flavors to meld while preparing the fritters.
  2. Mix dry ingredients: In a large mixing bowl, combine the diced Roma tomatoes, all-purpose flour, baking powder, kosher salt, black pepper, and minced garlic. Stir to distribute the ingredients evenly.
  3. Add wet ingredients and mix batter: Pour in the whole milk and crack in the large eggs. Gently fold the mixture to combine, ensuring the wet ingredients are fully incorporated into the dry. Then fold in the chopped green onions, finely chopped jalapeño pepper, red onion, and shredded mild cheddar cheese until evenly mixed.
  4. Heat the oil: Pour the vegetable oil into a frying pan and heat over medium heat until the oil shimmers, indicating it is hot and ready for frying.
  5. Fry the fritters: Using a spoon, carefully drop spoonfuls of the batter into the hot oil, spacing them to avoid crowding. Fry each fritter for 3 to 4 minutes on each side until they turn golden brown and crispy.
  6. Drain excess oil: Remove the fritters from the oil using a slotted spoon and place them on a paper towel-lined plate to drain any excess oil, keeping them crispy.
  7. Season and serve: Sprinkle the fritters lightly with salt to taste while still hot. Serve immediately with the prepared tomato mayonnaise dipping sauce for a delicious and flavorful treat.

Notes

  • Ensure oil is hot enough before frying to avoid soggy fritters.
  • Adjust the amount of jalapeño for desired spice level.
  • Use fresh Roma tomatoes for the best flavor and texture.
  • You can substitute mild cheddar with other cheeses if preferred.
  • Consume fritters immediately for the best crispiness.
