Egg Mixture:
- 6 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup diced cooked bacon or sausage
- 1/4 cup chopped green onions
- 1/2 cup chopped bell peppers
- 3 small flour tortillas (6-inch size)

Instructions
- Preheat the oven: Preheat the oven to 375°F and lightly grease a 9-inch pie dish with nonstick spray.
- Prepare the crust: Layer the flour tortillas in the dish, slightly overlapping to cover the bottom and sides like a crust.
- Mix the filling: In a medium bowl, whisk together the eggs, milk, salt, and pepper. Stir in the cheeses, cooked bacon or sausage, green onions, and bell peppers.
- Bake: Pour the egg mixture into the tortilla-lined pie dish. Bake for 30–35 minutes, or until the center is set and the top is lightly golden.
- Serve: Let cool for 5 minutes before slicing and serving.
Notes
- For a vegetarian version, skip the meat and add more veggies like mushrooms or spinach.
- You can also use whole wheat or gluten-free tortillas as needed.
