Additional Ingredients:

  • 6 oz rice noodles
  • 1 lb raw shrimp (peeled and deveined)
  • 1 red bell pepper (thinly sliced)
  • 1 cup shiitake mushrooms (sliced)
  • 1 tablespoon lime juice
  • Fresh cilantro (for garnish)
  • Green onions (sliced, for garnish)
  • Red chili flakes (optional)

Instructions

  1. Heat coconut oil in a large pot over medium heat. Add red curry paste, ginger, and garlic, and sauté for 1–2 minutes until fragrant.
  2. Pour in the chicken broth and coconut milk, stirring to combine. Add fish sauce and brown sugar, and bring to a simmer.
  3. Add rice noodles and cook according to package directions. Once noodles are tender, add the shrimp, bell pepper, and mushrooms. Cook for 3–4 minutes until the shrimp are pink and cooked through.
  4. Stir in lime juice. Taste and adjust seasoning as needed.
  5. Ladle into bowls and garnish with fresh cilantro, green onions, and red chili flakes if desired.
