Description

Teriyaki Chicken with Pineapple is a sweet and savory dish bursting with bold flavor. Juicy chicken is cooked in a homemade teriyaki sauce and paired with tender pineapple chunks for the perfect balance of salty, sweet, and tangy. It’s a quick and delicious meal that pairs beautifully with rice, noodles, or stir-fried veggies.

Ingredients

Scale

Chicken and Oil

  • 1 1/2 pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 tablespoon vegetable oil

Teriyaki Sauce

  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice (from canned pineapple)
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated

Other Ingredients

  • 1 cup canned pineapple chunks, drained (juice reserved for sauce)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (cornstarch slurry)
  • 2 green onions, sliced (for garnish)
  • 1 teaspoon sesame seeds (optional)

Instructions

  1. Prepare the Teriyaki Sauce: In a small bowl, whisk together the soy sauce, pineapple juice, brown sugar, honey, rice vinegar, garlic, and ginger to create a flavorful teriyaki sauce.
  2. Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Add the bite-sized chicken pieces and cook until they are browned on all sides and fully cooked through, about 6 to 8 minutes.
  3. Add Sauce and Pineapple: Pour the prepared teriyaki sauce into the skillet with the cooked chicken and bring it to a simmer. Add the drained pineapple chunks and cook together for 2 to 3 minutes to allow the flavors to meld.
  4. Thicken the Sauce: Stir in the cornstarch slurry (cornstarch mixed with water) into the skillet. Continue simmering for another 1 to 2 minutes until the sauce thickens and evenly coats the chicken and pineapple.
  5. Garnish and Serve: Remove the skillet from heat. Garnish the dish with sliced green onions and sesame seeds if desired. Serve hot over steamed rice or noodles for a complete meal.

Notes

  • You can substitute fresh pineapple for canned pineapple if preferred.
  • For a spicier version, add a pinch of red pepper flakes to the teriyaki sauce.
  • This dish works well with tofu or shrimp as alternative proteins.
