Description

This Tater Tot Breakfast Casserole is a hearty and crowd-pleasing dish perfect for breakfast or brunch. Featuring savory breakfast sausage, sautéed onions and red bell peppers, fluffy eggs mixed with cheese, and topped with crispy golden tater tots, this casserole combines comforting flavors and textures in one easy-to-make bake. It’s great for make-ahead meals, feeding a group, or a weekend family breakfast.

Ingredients

Scale

Meat and Vegetables

  • 1 pound breakfast sausage
  • 1 small onion, diced
  • 1 red bell pepper, diced

Egg Mixture

  • 8 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded cheddar cheese

Topping

  • 1 (28-ounce) bag frozen tater tots

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Cook Sausage and Veggies: In a skillet over medium heat, cook the breakfast sausage until it is browned and fully cooked through. Add the diced onion and red bell pepper to the skillet and sauté for 3 to 4 minutes until the vegetables are softened. Once done, remove the skillet from heat and set aside.
  3. Mix Eggs and Cheese: In a large bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper until well combined. Stir in the shredded cheddar cheese and then fold in the cooked sausage and vegetable mixture.
  4. Assemble Casserole: Pour the egg and sausage mixture into the prepared baking dish. Evenly arrange the frozen tater tots on top of the mixture.
  5. Bake: Place the casserole in the preheated oven and bake uncovered for 40 to 45 minutes, or until the eggs are set and the tater tots are golden brown and crispy.
  6. Rest and Serve: After baking, let the casserole rest for 5 minutes before slicing and serving to allow it to set further and make serving easier.

Notes

  • You can assemble the casserole the night before and refrigerate until ready to bake.
  • Try using pepper jack cheese or adding chopped spinach for extra flavor and nutrition.
  • Leftovers store well in the fridge for up to 4 days and reheat nicely.
