Ingredients
Scale
Meat and Veggies
- 1 pound breakfast sausage (pork or turkey)
- 1 small onion, diced
Cheese
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
Egg Mixture
- 8 large eggs
- 1 1/2 cups milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Other
- 1 (32 oz) bag frozen tater tots
- Chopped chives or parsley for garnish (optional)
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
- Cook Sausage and Onions: In a skillet over medium heat, brown the breakfast sausage until fully cooked, breaking it into crumbles. Add the diced onion and sauté until softened, about 3 minutes. Drain excess grease to avoid a greasy casserole.
- Layer Sausage Mixture and Cheese: Evenly spread the sausage and onion mixture in the prepared baking dish. Sprinkle shredded cheddar and mozzarella cheeses evenly over the sausage layer.
- Add Tater Tots: Carefully arrange the frozen tater tots in a single layer on top of the cheese, making sure they cover the entire surface.
- Prepare Egg Mixture and Pour: In a medium bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper until fully combined. Pour this mixture evenly over the tater tots in the baking dish.
- Bake the Casserole: Place the dish in the preheated oven and bake for 45–50 minutes, or until the eggs are set and the top is golden brown and bubbly.
- Rest and Garnish: Let the casserole rest for 5–10 minutes after removing it from the oven. Garnish with chopped chives or parsley if desired, then slice and serve warm.
Notes
- Make it ahead: Assemble the casserole the night before, cover, and refrigerate. Bake in the morning as directed for a convenient breakfast.
- Swap meats: Use bacon, ham, or a vegetarian sausage alternative to suit different dietary preferences.
- Cheese variety: Feel free to experiment with different cheeses like Monterey Jack or pepper jack for a flavor twist.
- Storage: Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
