Description

This Tater Tot Breakfast Casserole is a hearty and delicious dish perfect for breakfast or brunch. Featuring layers of crispy tater tots, savory sausage and onions, and a cheesy egg custard, it’s an easy make-ahead recipe that satisfies a crowd with comforting flavors and a golden crust.

Ingredients

Scale

Meat and Veggies

  • 1 pound breakfast sausage (pork or turkey)
  • 1 small onion, diced

Cheese

  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese

Egg Mixture

  • 8 large eggs
  • 1 1/2 cups milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Other

  • 1 (32 oz) bag frozen tater tots
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Cook Sausage and Onions: In a skillet over medium heat, brown the breakfast sausage until fully cooked, breaking it into crumbles. Add the diced onion and sauté until softened, about 3 minutes. Drain excess grease to avoid a greasy casserole.
  3. Layer Sausage Mixture and Cheese: Evenly spread the sausage and onion mixture in the prepared baking dish. Sprinkle shredded cheddar and mozzarella cheeses evenly over the sausage layer.
  4. Add Tater Tots: Carefully arrange the frozen tater tots in a single layer on top of the cheese, making sure they cover the entire surface.
  5. Prepare Egg Mixture and Pour: In a medium bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper until fully combined. Pour this mixture evenly over the tater tots in the baking dish.
  6. Bake the Casserole: Place the dish in the preheated oven and bake for 45–50 minutes, or until the eggs are set and the top is golden brown and bubbly.
  7. Rest and Garnish: Let the casserole rest for 5–10 minutes after removing it from the oven. Garnish with chopped chives or parsley if desired, then slice and serve warm.

Notes

  • Make it ahead: Assemble the casserole the night before, cover, and refrigerate. Bake in the morning as directed for a convenient breakfast.
  • Swap meats: Use bacon, ham, or a vegetarian sausage alternative to suit different dietary preferences.
  • Cheese variety: Feel free to experiment with different cheeses like Monterey Jack or pepper jack for a flavor twist.
  • Storage: Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
