Description

Sweet Chili Chicken Delight is a flavorful baked chicken dish featuring tender cubed chicken breasts coated in a sweet and spicy chili sauce. This recipe combines the warmth of garlic and ginger with the zesty sweetness of honey and lime, finished with fresh green onions for a perfect balance of savory, sweet, and tangy tastes. Ideal for a quick and satisfying weeknight meal that serves four.

Ingredients

Scale

Chicken

  • 0.75-1 lb chicken breasts, cubed
  • 1 Tbsp corn starch
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/2 tsp red pepper

Sauce

  • 1 Tbsp butter
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 3/4 cup sweet chili sauce
  • 1–2 Tbsp honey

Garnish

  • 1 lime, sliced
  • 3 Tbsp green onions, chopped

Optional Vegetables for Baking

  • Sliced bell peppers (quantity as desired)
  • Sliced jalapeños (quantity as desired)

Instructions

  1. Preheat the Oven: Preheat your oven to 375ºF (190ºC) to prepare for baking the chicken and vegetables.
  2. Prepare the Chicken: Cube the chicken breasts into 1-inch pieces. Toss them in a bowl with corn starch, black pepper, salt, and red pepper until evenly coated and seasoned.
  3. Bake the Chicken: Spread the seasoned chicken pieces on a baking sheet along with sliced bell peppers and jalapeños. Bake in the oven for 20 minutes, flipping halfway through for even cooking and browning.
  4. Make Sweet Chili Sauce: While the chicken bakes, melt butter in a saucepan over medium heat. Add minced garlic and ginger and sauté until fragrant, about 1-2 minutes. Stir in the sweet chili sauce and honey, then let it simmer to blend the flavors.
  5. Combine: Once the chicken is cooked, pour the sweet chili sauce over it. Toss well to ensure all chicken pieces are fully coated.
  6. Serve: Plate the sauced chicken over rice or a fresh salad. Garnish with chopped green onions and lime slices for a fresh, zesty finish.

Notes

  • You can adjust the honey quantity to make the sauce sweeter or less sweet according to your taste.
  • Slicing bell peppers and jalapeños adds a nice texture and heat, but they are optional.
  • Serve with steamed rice or mixed greens for a complete meal.
  • This dish can be made gluten-free by substituting the corn starch with a gluten-free starch alternative.
  • Make sure to flip the chicken halfway during baking for even cooking and browning.
