Ingredients
Scale
Chicken
- 0.75-1 lb chicken breasts, cubed
- 1 Tbsp corn starch
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/2 tsp red pepper
Sauce
- 1 Tbsp butter
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 3/4 cup sweet chili sauce
- 1–2 Tbsp honey
Garnish
- 1 lime, sliced
- 3 Tbsp green onions, chopped
Optional Vegetables for Baking
- Sliced bell peppers (quantity as desired)
- Sliced jalapeños (quantity as desired)
Instructions
- Preheat the Oven: Preheat your oven to 375ºF (190ºC) to prepare for baking the chicken and vegetables.
- Prepare the Chicken: Cube the chicken breasts into 1-inch pieces. Toss them in a bowl with corn starch, black pepper, salt, and red pepper until evenly coated and seasoned.
- Bake the Chicken: Spread the seasoned chicken pieces on a baking sheet along with sliced bell peppers and jalapeños. Bake in the oven for 20 minutes, flipping halfway through for even cooking and browning.
- Make Sweet Chili Sauce: While the chicken bakes, melt butter in a saucepan over medium heat. Add minced garlic and ginger and sauté until fragrant, about 1-2 minutes. Stir in the sweet chili sauce and honey, then let it simmer to blend the flavors.
- Combine: Once the chicken is cooked, pour the sweet chili sauce over it. Toss well to ensure all chicken pieces are fully coated.
- Serve: Plate the sauced chicken over rice or a fresh salad. Garnish with chopped green onions and lime slices for a fresh, zesty finish.
Notes
- You can adjust the honey quantity to make the sauce sweeter or less sweet according to your taste.
- Slicing bell peppers and jalapeños adds a nice texture and heat, but they are optional.
- Serve with steamed rice or mixed greens for a complete meal.
- This dish can be made gluten-free by substituting the corn starch with a gluten-free starch alternative.
- Make sure to flip the chicken halfway during baking for even cooking and browning.
