Instructions
- Mix the Meatball Ingredients: In a large bowl, combine ground beef or turkey, panko bread crumbs, chopped onion, minced garlic, egg, soy sauce, 1 tablespoon honey, 1 teaspoon sriracha, ground ginger, salt, and black pepper. Mix gently until just combined to avoid overworking the meat.
- Form the Meatballs: Shape the mixture into 1-inch meatballs, ensuring they are uniform in size for even cooking.
- Cook the Meatballs: Heat a skillet over medium heat and cook the meatballs for about 5-7 minutes per side, turning carefully until they are golden brown all over and cooked through, with an internal temperature of 160°F (71°C) for beef or 165°F (74°C) for turkey.
- Prepare the Sauce: In a small bowl, whisk together 1/4 cup soy sauce, the remaining 1 tablespoon honey, rice vinegar, and the remaining 1 teaspoon sriracha until well combined.
- Assemble the Bowls: Serve cooked rice in individual bowls, top with cooked meatballs and pineapple chunks. Drizzle the prepared sauce over the top and garnish with chopped green onions if desired for added freshness and flavor.
