Instructions
- Combine Ingredients: In a saucepan, add the halved strawberries, granulated sugar, and lemon juice. Place the pan over medium-high heat and bring the mixture to a gentle simmer.
- Simmer the Strawberries: Reduce the heat to medium-low and continue to simmer the strawberry mixture for approximately 20 minutes, stirring occasionally to prevent sticking and encourage even cooking.
- Prepare the Cornstarch Slurry: While the strawberries are simmering, mix the cornstarch with a small amount of water in a separate small bowl until smooth, forming a slurry to thicken the sauce.
- Thicken the Sauce: Stir the cornstarch slurry into the simmering strawberry mixture. Continue to cook over medium-low heat for another 2 to 3 minutes or until the sauce thickens to your liking.
- Cool the Topping: Remove the saucepan from the heat and let the strawberry topping cool completely. The sauce will thicken further as it cools, making it perfect for spreading or spooning over cheesecake or other desserts.
