Ingredients

Scale

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients:

  • 1 cup fresh strawberries, diced
  • 4 oz cream cheese, softened
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tsp vanilla extract

Topping:

  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat oven and prepare muffin tin: Preheat oven to 375°F and line a 12-cup muffin tin with paper liners.
  2. Mix dry ingredients: In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt. Gently fold in diced strawberries.
  3. Prepare wet mixture: In a separate bowl, beat the softened cream cheese until smooth. Add melted butter, eggs, buttermilk, and vanilla extract, whisking until fully combined.
  4. Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
  5. Fill muffin cups: Divide batter evenly among muffin cups.
  6. Add topping: In a small bowl, mix brown sugar, granulated sugar, and cinnamon. Sprinkle the mixture evenly over the muffins.
  7. Bake: Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool and serve: Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra richness, use full-fat cream cheese and buttermilk.
  • You can substitute raspberries or blueberries for strawberries.
  • Muffins freeze well for up to 2 months; thaw at room temperature or warm briefly in the microwave.
