Chicken and Seasoning

  • 6 bone-in, skin-on chicken thighs
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika

Sauce

  • 1 cup Guinness stout beer
  • 1/2 cup ketchup
  • 1/3 cup brown sugar
  • 2 tablespoons honey
  • 2 tablespoons soy sauce (gluten-free if needed)
  • 1 tablespoon Dijon mustard
  • 3 cloves garlic, minced

Vegetables and Fat

  • 1 small onion, finely chopped
  • 1 tablespoon olive oil


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the chicken.
  2. Sear Chicken: Heat olive oil in a large oven-safe skillet over medium heat. Place the chicken thighs skin-side down and cook for 5 to 7 minutes until golden brown and crisp. Flip and cook for an additional 3 minutes.
  3. Remove Chicken: Take the chicken thighs out of the skillet and set aside while preparing the sauce.
  4. Sauté Aromatics: In the same skillet, add the chopped onion and sauté until softened. Then add the minced garlic and cook for about 1 minute until fragrant.
  5. Prepare Sauce: Stir in the Guinness stout, ketchup, brown sugar, honey, soy sauce, Dijon mustard, smoked paprika, salt, and black pepper. Bring the mixture to a simmer and let cook for 5 minutes until the sauce thickens slightly.
  6. Return Chicken & Coat: Place the chicken thighs back in the skillet, skin-side up, spooning the sauce generously over each piece to coat them well.
  7. Bake: Transfer the skillet to the preheated oven and bake uncovered for 35 to 40 minutes. Occasionally baste the chicken with the sauce to develop a sticky glaze. Bake until the chicken reaches an internal temperature of 165°F and the sauce is thick and glossy.
  8. Optional Broil: For extra caramelization, you can broil the chicken for 2 to 3 minutes at the end of cooking, watching carefully to avoid burning.
  9. Serve: Serve the sticky Guinness chicken hot, spooning extra sauce over the top for added flavor.

  • For a deeper caramelized crust, finish the chicken under a broiler for a few minutes at the end.
