This Steak Egg Cheese Bagel is the ultimate breakfast sandwich, combining thinly sliced, perfectly seared steak with rich, buttery eggs and melted cheddar cheese all nestled inside a toasted everything bagel. Quick to prepare and packed with flavor, this sandwich is a hearty, satisfying way to start your day or enjoy a filling brunch.

Ingredients

Scale

Bagel & Cheese

  • 2 Everything Bagels, split
  • 4 slices Cheddar Cheese (or your favorite cheese)

Steak

  • 8 oz Steak, thinly sliced (Ribeye or Sirloin recommended)
  • 1 tablespoon Olive Oil
  • Salt and freshly ground Black Pepper to taste
  • Optional: Pinch of garlic powder or onion powder for seasoning

Eggs

  • 4 Large Eggs
  • 1 tablespoon Butter
  • Salt and freshly ground Black Pepper to taste

Optional Toppings

  • Hot sauce, for serving
  • Caramelized Onions
  • Sriracha Mayo

Instructions

  1. Prepare the Steak Slices: Partially freeze the steak for about 30 minutes to make slicing easier. Slice the steak thinly, about 1/8 inch thick, to ensure quick and even cooking.
  2. Season the Steak: In a bowl, toss the sliced steak with a generous pinch of salt and freshly ground black pepper. Optionally add garlic powder or onion powder for extra flavor.
  3. Heat the Skillet: Heat olive oil in a large skillet over medium-high heat until hot to ensure a good sear on the steak.
  4. Cook the Steak: Add steak slices in a single layer without overcrowding. Cook about 1-2 minutes per side until nicely browned and cooked to your preferred doneness. Cook in batches if needed.
  5. Rest the Steak: Remove steak from the skillet, place on a plate, and loosely tent with foil to keep warm and allow juices to redistribute.
  6. Cook the Eggs: In the same or a separate non-stick skillet, melt butter over medium heat. Crack the eggs in and cook to your preferred style: sunny-side up, over easy, medium, or hard.
  7. Season and Add Cheese: Season eggs with salt and pepper. During the last minute, place a slice of cheddar cheese on each egg and cover the skillet to melt the cheese.
  8. Toast the Bagels: While the eggs cook, toast bagel halves to desired crispness to prevent sogginess.
  9. Assemble the Sandwich: Place the bottom halves of the bagels on plates. Divide the steak evenly over them, then top each with a cheesy egg.
  10. Add Optional Toppings: Add caramelized onions, hot sauce, or sriracha mayo if desired for extra flavor.
  11. Finish: Place the top halves of the bagels over the stacked ingredients and serve immediately while warm and melty.

Notes

  • Partially freezing the steak makes thin slicing easier and results in more even cooking.
  • Do not overcrowd the skillet when cooking steak to ensure a proper sear without steaming.
  • Covering the eggs when adding cheese helps it melt quickly and evenly.
  • You can customize the egg style to your preference for runny or fully cooked yolks.
  • Toast bagels just before assembling to keep them crisp and prevent sogginess from warm fillings.
