Description

This Spinach Queso Dip is a creamy, cheesy appetizer combining cream cheese, white American, and pepper-jack cheeses with fresh spinach and diced green chilies. Instructions

  1. Combine Ingredients: In a large saucepan over medium heat (stovetop method), combine the cream cheese, white American cheese, pepper-jack cheese, salted butter, drained Rotel, and optional minced jalapeno. Stir continuously until all the cheeses and butter have melted together smoothly.
  2. Add Spinach and Milk: Once the cheese mixture has melted, stir in the freshly chopped spinach. Gradually add milk, one tablespoon at a time, stirring after each addition until the dip reaches your desired consistency. Use 3 to 4 tablespoons for a thinner dip.
  3. Serve: Transfer the hot, creamy spinach queso dip to a serving dish and enjoy immediately with tortilla chips, sliced veggies, or bread.
  4. Slow Cooker Alternative: Grease a 4-quart slow cooker and place the cream cheese, white American cheese, pepper-jack cheese, butter, Rotel, and jalapeno inside. Cover and cook on the low setting for 1 hour. Remove lid, stir in chopped spinach and desired amount of milk, then cook an additional 20 minutes until cheese is fully melted and combined. Stir well before serving.
