Description

  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder

Instructions

  1. Heat olive oil: Heat 1 tablespoon of olive oil in a skillet over medium heat until shimmering but not smoking.
  2. Sauté spinach: Add 2 cups of fresh spinach to the skillet and sauté until completely wilted and tender, about 2-3 minutes.
  3. Mix filling: In a mixing bowl, combine the sautéed spinach with 1 cup crumbled feta cheese, 1 teaspoon garlic powder, and salt and pepper to taste. Stir well to evenly incorporate all ingredients.
  4. Assemble quesadilla: Place one large flour tortilla in the heated skillet. Evenly sprinkle half of the tortilla with shredded mozzarella cheese, then spoon the spinach and feta mixture on top of the cheese layer.
  5. Cook and fold: Fold the tortilla in half over the filling. Cook the quesadilla until the bottom is golden brown and crispy, about 2-3 minutes. Carefully flip and cook the other side until golden brown.
  6. Repeat: Remove the cooked quesadilla and set aside. Repeat the process with the remaining tortillas and filling.
