For the Filling
- 300 g fresh spinach (or 200 g frozen, thawed and drained)
- 200 g feta cheese, crumbled
- 1 egg
- 1 garlic clove, finely grated
- ½ tsp dried oregano
- Black pepper, to taste
For the Pastry
- 1 sheet puff pastry (250–275 g), thawed if frozen
- 1 egg yolk + 1 tbsp milk (for egg wash)
- Optional: sesame seeds or nigella seeds for topping

- Prepare the filling: Heat a dry pan over medium heat and sauté the fresh spinach until wilted, or reheat and drain the thawed frozen spinach. Allow it to cool completely, then chop finely. In a mixing bowl, combine the cooled spinach with the crumbled feta cheese, one whole egg, the finely grated garlic clove, dried oregano, and black pepper. Mix thoroughly to incorporate all ingredients evenly.
- Prepare the pastry: On a lightly floured surface, roll out the thawed puff pastry sheet gently into a large rectangle. Spread the spinach and feta filling evenly over one half of the pastry, then fold the other half over to cover the filling, forming a sealed layered rectangle.
- Shape the rolls: Using a sharp knife or pizza cutter, slice the filled pastry into strips approximately 3–4 cm wide. Twist each strip or roll them gently into log shapes to create spiral rolls with visible layers of filling and pastry.
- Prepare for baking: Arrange the twisted rolls on a baking sheet lined with parchment paper, spacing them evenly. In a small bowl, whisk together the egg yolk and milk to create an egg wash. Brush the tops of each roll with this egg wash to promote browning. If desired, sprinkle sesame seeds or nigella seeds over the tops for added texture and flavor.
- Bake and serve: Preheat your oven to 200°C (390°F). Bake the rolls for 20–25 minutes or until they are puffed up and golden brown. Once baked, remove from the oven and allow to cool slightly. Serve the pastry rolls warm or at room temperature for the best taste experience.

- You can substitute frozen spinach for fresh; just be sure to thaw and squeeze out excess water thoroughly to avoid soggy filling.
