  • ½ cup crumbled cotija cheese
  • ¼ cup mayonnaise
  • 1 large egg
  • ½ cup shredded cheddar cheese

  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped green onions
  • 1 jalapeño, finely diced (seeds removed for less heat)
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin.
  2. Mix ingredients: In a large bowl, combine the corn, cotija cheese, mayonnaise, egg, cheddar cheese, cilantro, green onions, jalapeño, chili powder, garlic powder, and salt. Mix until well combined.
  3. Add breadcrumbs: Stir in the panko breadcrumbs and let the mixture sit for 5 minutes to thicken slightly.
  4. Fill muffin cups: Spoon the mixture into the mini muffin cups, pressing down gently to compact.
