Instructions

- Add spices: Sprinkle in the salt, black pepper, turmeric powder, and any optional spices like chaat masala or red chili powder. Toss the makhana well to coat them evenly in the spices.
- Toast spices: Continue roasting the spiced makhana for another 1–2 minutes to allow the flavors to meld and the spices to toast slightly.
- Cool and store: Remove the pan from heat and let the roasted makhana cool completely before storing them in an airtight container to maintain their crispness.
