Salad:
- 2 cups cooked chicken breast, chopped or shredded
- 1 cup canned black beans, rinsed and drained
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 red bell pepper, diced
- ½ red onion, finely chopped
- 1 avocado, diced
- ½ cup cherry tomatoes, halved
- ¼ cup chopped fresh cilantro
- 4 cups chopped romaine lettuce
Dressing:
- 1 teaspoon ground cumin
- juice of 1 lime
- 2 tablespoons olive oil
- salt and pepper to taste
Instructions
- In a large mixing bowl, combine the cooked chicken, black beans, corn, red bell pepper, red onion, avocado, cherry tomatoes, and cilantro.
- In a small bowl, whisk together the cumin, lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad ingredients and toss gently to coat everything evenly.
- Add the chopped romaine lettuce and toss again just before serving.
- Serve immediately or chill for up to 2 hours before serving for best flavor.
