- Prepare Ground Beef: Heat olive oil in a skillet over medium heat. Add diced onion and lean ground beef, breaking the beef apart with a spatula. Mix in grated garlic and cook for an additional minute until fragrant.
- Prepare Sweet Potatoes: To the same skillet, add peeled and diced sweet potatoes, fire-roasted diced tomatoes, canned diced green chiles, and water. Sprinkle in remaining 2 teaspoons chili powder, additional ground cumin if desired, salt, and pepper to taste. Stir everything to combine evenly. Cover the skillet and simmer over medium-low heat for about 20 minutes or until the sweet potatoes are tender when pierced with a fork. Stir occasionally to prevent sticking.
- Combine and Serve: Once the sweet potatoes are tender, add the cooked ground beef mixture back into the skillet. Stir to fully incorporate. Sprinkle shredded cheddar cheese evenly over the top. Cover the skillet again and let it cook on low for a few minutes until the cheese melts. Garnish with fresh cilantro if desired. Serve warm.
