Instructions
- Prepare the filling: In a large bowl, combine shredded chicken, black beans, corn, diced red bell pepper, shredded cheese, cumin, and chili powder. Mix well until all ingredients are evenly incorporated.
- Assemble the egg rolls: Place one egg roll wrapper on a clean, flat surface. Spoon about 2 tablespoons of the filling mixture into the center of the wrapper.
- Fold and roll: Fold the sides of the egg roll wrapper over the filling, then roll tightly from one end to the other, sealing the edges by moistening them with a little water to ensure the egg roll stays closed while frying.
- Heat the oil: Pour oil into a frying pan to a depth of about 1 to 1.5 inches. Heat the oil over medium heat until it reaches about 350°F (175°C), or when a small piece of wrapper bubbles immediately upon contact.
- Fry the egg rolls: Carefully place the prepared egg rolls into the hot oil, cooking in batches if necessary to avoid overcrowding. Fry each side for about 2 to 3 minutes or until golden brown and crispy.
