For the Grits:
- 4 cups water
- 1 teaspoon salt
- 1 cup quick-cooking grits
- 4 tablespoons unsalted butter
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 cup milk
For the Casserole:
- 4 large eggs, lightly beaten
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 6 slices cooked bacon, crumbled
- 2 green onions, sliced
Instructions
- Preheat oven and prepare baking dish: Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Cook the grits: In a saucepan, bring water and salt to a boil. Whisk in grits, cook until thickened, then stir in butter, 1 1/2 cups cheese, milk, eggs, pepper, and garlic powder. Fold in half of the bacon.
- Assemble the casserole: Pour the mixture into the baking dish, top with remaining cheese and bacon. Bake until set and golden.
- Finish and serve: Let rest, then sprinkle with green onions before serving.
Notes
- For a spicier version, add cayenne pepper or use pepper jack cheese.
- This casserole reheats well and can be made a day ahead.
