Instructions

  1. Activate Yeast: In a large mixing bowl, combine the warm water, active dry yeast, and sugar. Let the mixture sit for 5 minutes or until it becomes foamy, indicating the yeast is active.
  2. Make Dough: Add the flour, salt, and melted butter to the yeast mixture. Mix thoroughly until a dough forms. Transfer the dough to a floured surface and knead for 5–7 minutes until it becomes smooth and elastic.
  3. First Rise: Place the kneaded dough into a greased bowl and cover it with a clean cloth or plastic wrap. Allow it to rise in a warm place for 45–60 minutes or until doubled in size.
  4. Prepare for Baking: Preheat the oven to 425°F and line two baking sheets with parchment paper. Bring about 10 cups of water and the baking soda to a rolling boil in a large pot.
  5. Shape Pretzel Bites: Punch down the risen dough and divide it into four equal parts. Roll each piece into a long rope (18-20 inches), then cut the ropes into 1-inch bite-sized pieces.
  6. Boil Pretzel Bites: Working in batches, carefully drop the pretzel bites into the boiling baking soda water for 30 seconds. Remove them with a slotted spoon and place them on the prepared baking sheets.
