Description

This Slow Cooker White Lasagna Soup is a creamy, comforting Italian-American dish made with tender chicken, broken lasagna noodles, spinach, and a trio of Italian cheeses. Perfect for a hearty yet easy-to-make meal, this soup combines the flavors of classic lasagna in a cozy, warm bowl, all prepared effortlessly in a slow cooker.

Ingredients

Scale

Main Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups milk
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 8 ounces lasagna noodles, broken into pieces
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped

Instructions

  1. Prepare the Base: Place the chicken breasts, finely chopped onion, minced garlic, chicken broth, milk, heavy cream, Italian seasoning, salt, black pepper, and optional crushed red pepper flakes into the slow cooker. Cover the slow cooker for even cooking.
  2. Slow Cook the Chicken: Cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender and fully cooked through, ensuring the flavors meld together beautifully.
  3. Shred the Chicken: Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the pot to continue cooking with the broth and seasonings.
  4. Add the Noodles: Stir in the broken lasagna noodles, cover the slow cooker again, and cook on high for an additional 20 to 30 minutes, or until the noodles are tender and cooked through.
  5. Add the Cheeses and Spinach: Mix in the shredded mozzarella, grated Parmesan, ricotta cheese, and chopped fresh spinach. Stir until the cheeses melt completely and the spinach wilts, creating a creamy and flavorful finish.
  6. Serve: Ladle the warm, creamy white lasagna soup into bowls and serve immediately for a comforting meal.

Notes

  • Use cooked rotisserie chicken to reduce the overall cooking time by adding it during the last 30 minutes of cooking instead of raw chicken.
  • Add mushrooms or zucchini for extra vegetable nutrition and flavor.
  • Adjust the thickness of the soup by adding more chicken broth if you prefer a thinner consistency.
