For the Chicken:
- 1.5 lbs boneless skinless chicken breasts
- 1 packet taco seasoning (about 1 oz)
- 1 can (10 oz) diced tomatoes with green chilies (undrained)
- 1/2 cup chicken broth
- 1 cup prepared queso dip or cheese sauce
For Serving:
- 8 small flour or corn tortillas
- optional toppings: shredded lettuce, diced tomatoes, chopped cilantro, sliced jalapeños, sour cream, avocado, lime wedges
Instructions
- Place the chicken in the slow cooker: Add the chicken breasts to the slow cooker.
- Season the chicken: Sprinkle the taco seasoning over the chicken.
- Add tomatoes and broth: Pour the diced tomatoes with green chilies and chicken broth over the chicken.
- Cook the chicken: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until tender.
- Shred the chicken: Use two forks to shred the chicken in the slow cooker.
- Combine with queso: Stir in the queso dip and let it heat through.
- Assemble tacos: Warm tortillas, fill with queso chicken, add toppings, and serve.

- You can use rotisserie chicken and prepare the dish on the stovetop.
