Potatoes:
- 2 1/2 pounds baby potatoes, halved or quartered if large
Seasoning:
- 2 tablespoons olive oil
- 1 tablespoon melted butter
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried rosemary or Italian seasoning
Garnish:
- 1/4 cup grated Parmesan cheese (optional)
- Chopped fresh parsley for garnish (optional)
Instructions
- Prepare Potatoes: Wash and cut the potatoes into evenly sized pieces.
- Cook in Slow Cooker: Place potatoes in the slow cooker. Mix olive oil, melted butter, garlic, salt, pepper, and herbs in a bowl. Pour over potatoes, toss to coat. Cover and cook on high for 2 1/2 to 3 hours or low for 5 to 6 hours until tender.
- Finish and Serve: Before serving, add Parmesan cheese and parsley. Serve warm.

- You can use Yukon gold, red potatoes, or fingerlings for this recipe.
