Instructions
- Prepare the Beef: Season the beef bites with salt, pepper, dried thyme, and dried rosemary. Heat olive oil in a skillet over medium-high heat and sear the beef in batches until browned on all sides. Transfer the seared beef pieces to the slow cooker.
- Sauté the Garlic: In the same skillet, add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it. Pour in the beef broth and use a wooden spoon to scrape up any browned bits stuck to the bottom of the pan. Pour this garlic-broth mixture over the beef in the slow cooker.
- Prepare the Potatoes: Toss the baby potatoes with melted butter, smoked paprika, salt, and pepper until evenly coated. Add the potatoes to the slow cooker, placing them on top of the beef.
