Ingredients
Scale
Chicken Thighs:
- 2.5 to 3 pounds bone-in, skin-on chicken thighs (about 6–8 pieces)
Seasoning:
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
Additional:
- 1/2 cup chicken broth
- 1 tablespoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
Instructions
- Prepare the Chicken: Pat the chicken thighs dry and season with the salt, pepper, garlic powder, onion powder, smoked paprika, and thyme.
- Sear the Chicken: Brown the chicken thighs in a skillet, then transfer them to the slow cooker.
- Cook in the Slow Cooker: Pour chicken broth around the chicken and cook on low for 6-7 hours or high for 3-4 hours.
- Thicken the Sauce: Optionally, thicken the juices with a cornstarch slurry.
- Serve: Enjoy the chicken thighs with your choice of sides.
Notes
- You can remove the skin after cooking for a lighter dish.
- Boneless thighs can be used but may cook faster.
- For a richer flavor, consider using bone broth instead of chicken broth.
