Scale
Dough Ingredients
- 2 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon salt
- 2 1/4 teaspoons active dry yeast
- 3/4 cup warm milk
- 2 tablespoons vegetable oil
- 1 large egg
Filling Ingredients
- 1/2 cup chopped scallions
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce
Toppings
- 1 tablespoon sesame seeds
- 1 egg yolk mixed with 1 tablespoon water (for egg wash)
Instructions
- Activate the yeast: In a bowl, combine warm milk, sugar, and active dry yeast. Let the mixture sit until it becomes foamy, about 5 to 10 minutes, indicating the yeast is active.
- Prepare the dough: Add the egg, vegetable oil, and salt to the yeast mixture. Gradually incorporate the all-purpose flour while mixing until a soft dough forms.
- Knead the dough: Transfer the dough onto a floured surface and knead for 8 to 10 minutes until it becomes smooth and elastic.
- First rise: Place the kneaded dough into a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
- Prepare the filling: In a small bowl, mix the chopped scallions with sesame oil and soy sauce until well combined.
- Shape the buns: Punch down the risen dough and divide it into 8 equal portions. Flatten each portion, spoon a generous amount of the scallion mixture onto the dough, then fold and seal the dough to form buns.
- Second rise: Place the shaped buns on a lined baking sheet, cover, and let them rise for another 20 minutes until puffed.
- Apply egg wash and toppings: Brush each bun with the egg wash made of egg yolk and water, then sprinkle sesame seeds evenly on top.
- Bake: Preheat the oven to 350°F (175°C). Bake the buns for 18 to 20 minutes until they turn golden brown on top.
- Cool and serve: Allow the buns to cool slightly before serving. Enjoy them warm for the best flavor and texture.
Notes
- Add a pinch of white pepper or minced garlic to the filling for extra flavor.
- These buns are best served warm but can be reheated gently in an oven or steamer.
- Make sure the milk is warm, not hot, to avoid killing the yeast.
- Cover the dough during rising to prevent it from drying out.
