Ingredients
Scale
Meat
- 1 pound smoked sausage or kielbasa, sliced into 1/2-inch rounds
Vegetables
- 1 pound baby red potatoes, quartered
- 1 pound fresh green beans, trimmed and halved
- 1 medium onion, sliced
- 3 cloves garlic, minced
Seasonings & Oils
- 1/4 cup olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Optional
- 1 cup shredded cheddar cheese
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the casserole.
- Prepare Ingredients: In a large mixing bowl, combine the sliced sausage, quartered baby red potatoes, trimmed and halved green beans, and sliced onion. Add the minced garlic, olive oil, smoked paprika, dried thyme, dried rosemary, salt, and pepper. Toss thoroughly until all ingredients are evenly coated with the oil and seasonings.
- Assemble Casserole: Transfer the mixed ingredients into a large baking or casserole dish, spreading everything out in an even layer to ensure uniform cooking.
- Bake: Cover the dish with aluminum foil and place it in the preheated oven. Bake covered for 30 minutes. After this time, remove the foil, stir the ingredients to redistribute, and continue baking uncovered for an additional 15-20 minutes or until the potatoes are tender and the sausage is nicely browned.
- Optional Cheese Topping: If you choose to add cheese, sprinkle the shredded cheddar evenly over the casserole during the last 5 minutes of baking. This will allow the cheese to melt and become bubbly.
- Serve: Once baked, remove the casserole from the oven and allow it to cool slightly before serving for the best flavor and texture experience.
Notes
- Using baby red potatoes ensures quicker and more even cooking, but you can substitute with other waxy potatoes if desired.
- You can swap smoked sausage for kielbasa or another smoked sausage variety depending on availability.
- The cheese topping is optional; omit it for a dairy-free version.
- To save time, pre-cut vegetables can be used, but fresh vegetables will provide the best texture.
- Seasonings can be adjusted to taste; smoked paprika can be replaced with regular paprika if unavailable.
- Leftovers keep well refrigerated for up to 3 days and reheat nicely in the oven or microwave.
