Ingredients
Scale
Meat and Veggies
- 1 pound ground beef or ground turkey
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 cup frozen peas and carrots
- 1 large potato, peeled and diced small
Spices and Sauce
- 1 tablespoon curry powder
- 1 teaspoon garam masala
- 1 teaspoon cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup tomato sauce
- 1/4 cup water
Other
- 1 tablespoon oil
- 1 cup shredded cheddar cheese
- 1 bag (about 32 ounces) frozen tater tots
- 2 tablespoons chopped cilantro for garnish
Instructions
- Preheat the Oven: Preheat your oven to 400°F (204°C) to prepare for baking the casserole later.
- Sauté Aromatics: Heat 1 tablespoon of oil in a large skillet over medium heat. Add the finely chopped onion and cook until it becomes soft and translucent. Then stir in minced garlic and grated ginger, cooking for about one minute until fragrant.
- Cook the Meat: Add the ground beef or ground turkey to the skillet. Break it apart as it cooks and continue cooking until it is browned evenly and no longer pink.
- Add Vegetables and Spices: Mix in the diced potatoes along with frozen peas and carrots. Sprinkle in curry powder, garam masala, cumin, turmeric, chili powder, salt, and black pepper. Stir everything well to evenly coat the ingredients with the spices.
- Simmer the Mixture: Pour in the tomato sauce and water. Cover the skillet and let the mixture simmer for about 10 minutes, or until the potatoes begin to soften and flavors meld together.
- Assemble the Casserole: Transfer the cooked mixture into a greased baking dish, spreading it out evenly. Sprinkle the shredded cheddar cheese evenly on top.
- Add Tater Tots: Arrange the frozen tater tots in a single layer over the cheese-covered mixture, covering the entire surface.
- Bake: Place the casserole in the preheated oven and bake uncovered for 30 to 35 minutes, or until the tater tots are golden brown and crispy.
- Garnish and Serve: Remove the casserole from the oven and sprinkle chopped cilantro over the top for a fresh, herbal finish. Serve hot.
Notes
- You can substitute ground chicken or make this dish vegetarian by using cooked lentils instead of meat.
- For extra flavor, add a squeeze of lemon juice before serving or serve alongside your favorite chutney.
- To increase spiciness, include chopped green chilies when cooking the meat mixture.
