  • 4 ounces feta cheese, crumbled
  • 4 ounces cream cheese, softened
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • 1 tablespoon chopped fresh dill or parsley, optional

Instructions

  1. Preheat oven and prepare beets: Preheat oven to 350°F and line two baking sheets with parchment paper. Slice beets thinly using a mandoline or knife.
