For Whipped Feta Dip:
- 4 ounces feta cheese, crumbled
- 4 ounces cream cheese, softened
- 2 tablespoons plain Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 teaspoon honey
- 1 tablespoon chopped fresh dill or parsley, optional
Instructions
- Preheat oven and prepare beets: Preheat oven to 350°F and line two baking sheets with parchment paper. Slice beets thinly using a mandoline or knife.
- Season and bake: Toss beet slices with olive oil, salt, pepper, and garlic powder. Bake for 20–25 minutes until crisp.
- Prepare dip: In a food processor, blend feta, cream cheese, yogurt, lemon juice, olive oil, and honey until smooth.
- Serve: Transfer dip to a bowl, sprinkle with herbs, and serve with beet chips.
Notes
- For extra-crispy chips, pat beet slices dry before roasting.
- Use an air fryer at 325°F for about 15 minutes for a different cooking method.
