Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix wet ingredients: In a large bowl, combine the mashed banana, peanut butter, maple syrup, and vanilla extract. Mix until smooth.
- Add dry ingredients: Add in the grated carrots, oats, cinnamon, nutmeg, and salt. Stir until fully combined.

- Bake: Scoop tablespoon-sized portions onto the baking sheet and gently flatten into a round cookie shape. Bake for 12–15 minutes or until lightly golden.
