Raspberry Liqueur Mixture:

  • 1 cup heavy cream
  • 8 oz mascarpone cheese (room temperature)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Assembly:

  • 24 ladyfinger cookies
  • Additional raspberries and powdered sugar for garnish

Instructions

  1. Fresh Raspberry Mixture: Toss raspberries with granulated sugar and set aside.
  2. Raspberry Liqueur Mixture: Combine raspberry liqueur/juice with water.
  3. Mascarpone Cream: Beat heavy cream until soft peaks form. Mix mascarpone, powdered sugar, and vanilla until smooth. Fold in whipped cream.
  4. Assembly: Dip ladyfingers in raspberry mixture. Layer ladyfingers, mascarpone cream, and raspberries in a dish. Chill for at least 4 hours.
