Description

This refreshing Ranch Cauliflower Salad is a crunchy, flavorful blend of fresh vegetables and a creamy homemade ranch dressing. Featuring cauliflower, cherry tomatoes, cucumber, red onion, and turkey bacon or sausage, it’s a perfect low-effort side dish or light snack that’s ready in just 15 minutes and chilled for maximum flavor.

Ingredients

Scale

Salad Ingredients

  • 1 medium head of cauliflower, cut into bite-sized florets
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cooked, diced turkey bacon or turkey sausage
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped

Ranch Dressing

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or Greek yogurt
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Combine the vegetables and meat: In a large bowl, add the bite-sized cauliflower florets, halved cherry tomatoes, diced cucumber, finely chopped red onion, cooked turkey bacon or sausage, chopped fresh parsley, and fresh chives. Mix gently to evenly distribute the ingredients.
  2. Prepare the ranch dressing: In a separate bowl, whisk together the mayonnaise, sour cream or Greek yogurt, dried dill, dried parsley, garlic powder, onion powder, lemon juice, salt, and pepper until the mixture is smooth and well combined.
  3. Toss salad with dressing: Pour the prepared ranch dressing over the mixed vegetables and turkey. Gently toss everything together until all the ingredients are thoroughly coated with the dressing.
  4. Chill the salad: Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld and the salad to chill.
  5. Serve: Serve the Ranch Cauliflower Salad chilled as a refreshing side dish or a light, healthy snack for up to four servings.

Notes

  • You can substitute turkey bacon or sausage with cooked chicken or keep it vegetarian by omitting the meat.
  • Greek yogurt can be used instead of sour cream for a healthier, protein-rich alternative.
  • Adjust the herbs and spices in the dressing according to taste preferences.
  • The salad can be made a few hours in advance for better flavor integration.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
