Instructions

  1. Sauté vegetables: In a large pot, heat the butter and olive oil over medium heat. Add the chopped onion, carrots, and celery, cooking for about 5 minutes until the vegetables soften.
  2. Add garlic: Stir in the minced garlic and cook for 1 minute until fragrant, ensuring it doesn’t burn.
  3. Add potatoes and broth: Add the diced potatoes, chicken broth, salt, black pepper, marjoram, and thyme to the pot. Bring the mixture to a boil.
  4. Simmer: Reduce the heat and let the soup simmer gently for about 20 minutes until the potatoes are very tender.
