Instructions
- Preheat and prepare muffin cups: Preheat your oven to 175°C (350°F) and generously grease mini or regular muffin cups to prevent sticking during baking.
- Mix dry ingredients: In a medium bowl, thoroughly combine the packed light brown sugar, all-purpose flour, and roughly chopped pecans to evenly distribute flavors and nuts.
- Beat wet ingredients: In a separate bowl, beat the softened unsalted butter with the beaten eggs until the mixture is smooth and well blended, creating a creamy base for the batter.
- Combine mixtures: Gently incorporate the dry ingredients into the wet mixture, stirring carefully just until combined to avoid overmixing and maintain a tender texture.
- Fill muffin cups: Spoon the batter into the prepared muffin cups, filling each about two-thirds full to allow room for rising during baking.
