Bravas Sauce

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sweet paprika
  • 1/4 teaspoon cayenne pepper
  • 1 cup crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon red wine vinegar
  • 1/2 teaspoon sugar
  • Salt to taste

Garlic Mayonnaise

  • 1/2 cup mayonnaise
  • 1 teaspoon lemon juice
  • 1 small garlic clove, finely minced

Garnish

  • 1 tablespoon chopped fresh parsley


Instructions

  1. Prepare the Potatoes: Preheat the oven to 425°F. Toss the cubed potatoes with olive oil, salt, and black pepper until evenly coated. Spread them in a single layer on a baking sheet.
  2. Roast the Potatoes: Roast in the preheated oven for 30 to 35 minutes, turning halfway through, until the potatoes are golden brown and crispy.
  3. Make the Bravas Sauce: While the potatoes are roasting, heat olive oil in a small saucepan over medium heat. Sauté the chopped onion for about 4 minutes until soft. Add the minced garlic and cook for 1 minute until fragrant. Stir in smoked paprika, sweet paprika, and cayenne pepper, cooking briefly to release the aromas.
  4. Simmer the Sauce: Add crushed tomatoes, tomato paste, red wine vinegar, sugar, and salt. Simmer the sauce for about 10 minutes, stirring occasionally until thickened.
  5. Prepare Garlic Mayonnaise: In a small bowl, combine mayonnaise, lemon juice, and minced garlic. Mix well until smooth.
  6. Serve: Place the crispy roasted potatoes on a serving plate. Spoon the bravas sauce generously over the potatoes, drizzle with the garlic mayonnaise, and sprinkle with chopped fresh parsley to garnish.
