- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Bravas Sauce
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon sweet paprika
- 1/4 teaspoon cayenne pepper
- 1 cup crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon red wine vinegar
- 1/2 teaspoon sugar
- Salt to taste
Garlic Mayonnaise
- 1/2 cup mayonnaise
- 1 teaspoon lemon juice
- 1 small garlic clove, finely minced
Garnish
- 1 tablespoon chopped fresh parsley
Instructions
- Prepare the Potatoes: Preheat the oven to 425°F. Toss the cubed potatoes with olive oil, salt, and black pepper until evenly coated. Spread them in a single layer on a baking sheet.
- Roast the Potatoes: Roast in the preheated oven for 30 to 35 minutes, turning halfway through, until the potatoes are golden brown and crispy.
- Make the Bravas Sauce: While the potatoes are roasting, heat olive oil in a small saucepan over medium heat. Sauté the chopped onion for about 4 minutes until soft. Add the minced garlic and cook for 1 minute until fragrant. Stir in smoked paprika, sweet paprika, and cayenne pepper, cooking briefly to release the aromas.
- Simmer the Sauce: Add crushed tomatoes, tomato paste, red wine vinegar, sugar, and salt. Simmer the sauce for about 10 minutes, stirring occasionally until thickened.
- Prepare Garlic Mayonnaise: In a small bowl, combine mayonnaise, lemon juice, and minced garlic. Mix well until smooth.
- Serve: Place the crispy roasted potatoes on a serving plate. Spoon the bravas sauce generously over the potatoes, drizzle with the garlic mayonnaise, and sprinkle with chopped fresh parsley to garnish.
Notes
- For extra crispiness, parboil the potatoes for 5 minutes before roasting.
- Adjust cayenne pepper to control the heat level to your preference.
- Patatas Bravas are traditionally served as a Spanish tapas dish, perfect for sharing.
